What's all this coconut sugar stuff?
On the island of Java, small scale farmers ‘tap’ their coconut palm
trees for the sweet nectar from the coconut blossom. This does not
harm the tree in any way, it simply means that a coconut will not grow
where the blossom was cut. This nectar is gently heated over log fires until it
becomes a delicious, unrefined rich sugar. Owing to the nature of the harvest
and production of coconut sugar, it is recognised as the most sustainable form
of sugar by the Food and Agriculture Organisation (FAO).
Analysis of coconut sugar shows that it has a low glycemic index of 35 which is
less than refined sugar (68), honey (48) and agave (40). It is not a raw food,
but we considered this very carefully and feel it clearly has the highest all round
integrity. Did we mention that it also has an utterly delicious caramel taste?
"The juice of the coconut tree can be transformed into a sugar as soft as
honey… Nature created this product such that it could not be processed in
factories. Palm sugar can only be produced in palm tree habitats. Local
populations can easily turn the nectar into coconut blossom sugar. It
is a way to solve the world’s poverty. It is also an antidote against
