Forever Cacao’s Pablo hand makes his chocolate in the hills of Wales with Peruvian Cacao which is grown, harvested and dried by Ashaninka families. He aims to bring raw chocolate up to the standard of its roasted counterpart and create something that’s nutritious and completely delicious at the same time. Below we discover Pablo’s favourite product to make, his personal motto in life and much more!
What inspired you to start making raw chocolate?
I fell into this by accident after being introduced to Raw chocolate at a friend’s birthday party, it quite simply blew my mind – I had to find out more…after much sampling, the magic it held became apparent however the difference between the texture & flavour of an artisan bar and this healthy euphoric alternative seemed so huge at the time so I started my quest to bridge the gap.
What’s your favourite product that you make?
It's a tough one because each of my bars has a different vibe at different times of the day – for instance the 80% is a great daytime bar whereas the 72% is lovely to savour and share after dinner with friends. A little goes a long way when it's eaten mindfully.
If you could choose any music to make chocolate to, what would it be?
As long as the bass is heavy and the rhythm is driving the chocolate will have soul!
What was your favourite sweet as a child?
After enduring the hippy favourite of carob coated raisins I'd eat any sweets I could get my hands on! I loved fruit and still do – scrumping strawberries is a strong childhood memory.
Raw chocolate is going from strength to strength. What is your favourite thing about the movement?
I think it's great that people are becoming more nutritionally aware and Raw chocolate is often the gateway to a more healthy informed lifestyle. I mean if healthier food can taste this good what else is there? It’s not all worthy and difficult, it’s tasty and vibrant (and you can literally feel the difference in you when you eat it)
Where do you think this raw chocolate movement is going?
Onwards and upwards in all directions, it really is life changing for many people. It's great to have watched this from the beginning, be a part of it now and see it explode all over the world. There's also a resurgence of Cacao being recognised as a medicine and its therapeutic uses are being explored through Cacao ceremonies. People are ready for alternatives to the old way of doing things.
