In Ecuador there is a variety of cocoa bean that is unique to that country - the Nacional Arriba. It's famous around the world because it has an extraordinary fruity and floral flavour. The
chocolate connoisseur Chloe Doutre-Roussel is reported to have visited the Pacari chocolate factory herself because she thought Pacari were adding flavourings to their chocolate! In reality, the Pacari secret is that they produce all of their chocolate in small batches to keep maximum control over the subtle processes that keep the chocolate special. Unusually, Pacari also source their cocoa beans not from large co-operatives selling commodity beans, but direct from small-scale growers. Pacari have an ongoing project to encourage local people with land to grow organic Nacional Arriba cacao. This results in growers receiving a very good price for their beans - higher in fact than Fair Trade prices.
